I bought girl scout cookies. And ate lots of them. And loved every minute of it.  Tagalongs and Thin Mints are my friends.

Snack:
Hummus, carrots, Handful of Mary's crackers, cheese stick

For din, I stuffed chicken with:
  • sauteed spinach
  • red peppers
  • goat cheese/mozz cheese
  • it was yum.

with a sweet potato mashed with:
  • pumpkin pie spice
  • bourbon vanilla
and broccoli and cauliflower. then LOTS OF COOKIES! YAY!

Might be going out tonight with some girls to dance off the cookies...we shall see.

Tomorrow is yoga. I am so excited because I feel a little tight from swimming and running.

  3. I am trying to like goat cheese. Its not that I find it sharp...I feel like it has a chemical taste to it. truth be told, I wanted feta...but accidently bought Goat Cheese Feta..oops! I used it on my salad and it was tasty with the dried cranberries and last night with the sweet spinach it was good. I am trying to like it...I like provolone..just didn't have any on hand!!

How are your cooking experience going? Should I post the Chicken Pot Pie on my blog?

  4. Is all feta goat milk derived or is there goat and also cow milk feta???

  5. I believe there is a goat's milk feta and a cow's milk feta because this feta had a distinctly different taste than feta I am used to.

  6. Hi Meghan! I love your blog. I just found it via Oh She Glows and I'm hooked!

Goat cheese is a funny one - but I like it because my fiance is lactose intolerant so I've gotten used to it. I love it on pizza, and it's great when paired with sweet flavors - jams, dried fruit, berries, etc. I made mini polenta pizzas with it the other day and they were heavenly! (here's the recipe, if you're interested - suuuuper easy: http://iamthebeholder.wordpress.com/2009/02/25/a-mouthful-of-awesome/)

    xoxo
